Elbasan tava (Albania)


  • 1 kg mutton with bones,
  • 1 onion, quartered,
  • 1 tbsp butter,
  • 2 cups strained yogurt,
  • 2 egg yolks,
  • 3/4 cup flour,
  • 4 cups boiling water,
  • 1 tsp chilli,
  • Salt to taste.


  1. Melt the butter in a pressure cooker,
  2. Add mutton and sautee until it changes color to brown,
  3. Add onions and sautee for 2-3 mins.,
  4. Add water and salt, cover the lid,
  5. Cook until the mutton removes easily from the bones,
  6. Take mutton into a 21*21 cm baking dish,
  7. Remove the bones and shred mutton, spread evenly,
  8. In a sauce pan beat the yogurt, egg yolks and 1 cup of broth together,
  9. Add flour and keep beating until no lumps,
  10. Cook the sauce, constantly beating, until set,
  11. Remove from heat, add some salt and beat again,
  12. Pour the sauce over the mutton evenly,
  13. Sprinkle chilli on top,
  14. Bake in a 180 C degrees pre-heated oven until golden.
