Bey Soup Recipe
Begova (Bey Plain) soup. Sarajevo is one of the leading dishes of the cuisine and is an indication of the influence of the Ottoman cuisine on the food culture in the Balkans. Bey Soup was dedicated to the name of Gazi Hüsrev Bey, who was appointed as a Bosnian starter in Ottoman times and loved by the people.
400 ml chicken broth
600 ml water
1 small cubed carrot
1 small cubed celery
1 soup spoon rice
30 pieces of dried okra
1 egg yolk
3 soup spoon yogurt
2 soup spoon boiled chicken meat
Salt, black pepper
1 soup spoon finely chopped parsley
1. Water, chicken water. I put rice, carrots, celery, and bamboo in pots and boil them at high heat. Let’s continue cooking rice and vegetables until softened.
2. Mix egg yolks and yogurt in a bowl. I add this to my soup little by little while mixing the beans with a whisk to prevent the cutting of the soup.
3. Chicken meat, salt and pepper add the soup, served with parsley and decorate.
